Our madeleines

Madeleine is one of the French cuisine famous symbol. Its name comes from a young maid named Madeleine Paulmier. In 1755 She cooked this delicate little cake with a nice bump on the top and a shell print on the bottom. This took place in the kitchen of a French Duke castle during a diner he was organizing. She delighted every one, the Duke asked to meet her to know who was the talented Chef who had created the madeleine. 

She was rewarded and her name became a Symbol of the French cuisine heritage.

Madeleines are sweet but not too sweet, with a soft feel, and when they come out of the oven the buttery smell catches your senses and brings you back to your best childhood moments.
